Potato Peanut Curry & Steamed Rice

Tonight, Davis and I conquered a new recipe: potato peanut curry and steamed rice.  I followed this recipe: http://www.motherearthliving.com/food-and-recipes/recipes/potato-peanut-curry-recipe-zm0z14mazpit.aspx#axzz30JeKE2iA

It was a lot easier than the recipe looked, and just took 20-25 minutes.  It really helped to gather all of the ingredients together on the counter, ready to go.  That meant having all the teaspoons and tablespoons of spices scooped and laid to the side.

Also, if I could publish the delicious smell of this recipe while preparing it, I would.  Smelloputer, smellivision, what-have-you.

Curried Chicken Soup

I tried a new recipe last week.  Since it's winter and Davis and I both love soup, well any food really, I set out to find a soup that I could make myself as opposed to buying canned soup from the store.  I found a recipe for curried chicken soup and thought it looked healthy and delicious enough to try.  I followed the recipe here: http://southernfood.about.com/od/chickensouprecipes/r/bl60414c.htm

I will say that I wish I'd cut all the vegetables and fruit the night before cooking the soup.  There are quite a few vegetables involved in the recipe, so it's a bit time consuming.  It took me about an hour just to cut everything up.  Vegetables and fruit involved were: celery, a bell pepper, a carrot, an onion, and one large granny smith apple.  Oh, and then there's the raw chicken breasts you have to thaw and cut into cubes.  Yuck.

Spices involved were: curry powder, nutmeg or mace, and salt.  Honestly the reason I chose to try this recipe is because I LOVE CURRY.  Not only does it have a lot of health benefits, but it's also Delicious with a capital "D".

After all items were chopped, I had to cook it in a skillet.  If I had known how much came from all of the chopped up vegetables and chicken and flour added, I would have used the deep skillet.  I used a shallow skillet that I normally use for cooking eggs and other things.

Although the recipe tells you to add the rest of the ingredients to the skillet, I just mixed those ingredients in a soup pot (see pictures below), heated it up on medium low just before the skillet ingredients were ready, and then dumped the skillet ingredients into the pot.  After that, I had to bring it to a boil, cover it, and cook on low for 45 minutes.

Next time I make this soup though, I will try adding rice.  I think it would add a nice texture and more substance.

So, was it good?  Yes, yes it was.  I will definitely be making it again.






Also, I would like to add that the oil and aloe water make-up remover has been working quite well.  My skin has never looked better!
