Curried Chicken Soup

I tried a new recipe last week.  Since it's winter and Davis and I both love soup, well any food really, I set out to find a soup that I could make myself as opposed to buying canned soup from the store.  I found a recipe for curried chicken soup and thought it looked healthy and delicious enough to try.  I followed the recipe here: http://southernfood.about.com/od/chickensouprecipes/r/bl60414c.htm

I will say that I wish I'd cut all the vegetables and fruit the night before cooking the soup.  There are quite a few vegetables involved in the recipe, so it's a bit time consuming.  It took me about an hour just to cut everything up.  Vegetables and fruit involved were: celery, a bell pepper, a carrot, an onion, and one large granny smith apple.  Oh, and then there's the raw chicken breasts you have to thaw and cut into cubes.  Yuck.

Spices involved were: curry powder, nutmeg or mace, and salt.  Honestly the reason I chose to try this recipe is because I LOVE CURRY.  Not only does it have a lot of health benefits, but it's also Delicious with a capital "D".

After all items were chopped, I had to cook it in a skillet.  If I had known how much came from all of the chopped up vegetables and chicken and flour added, I would have used the deep skillet.  I used a shallow skillet that I normally use for cooking eggs and other things.

Although the recipe tells you to add the rest of the ingredients to the skillet, I just mixed those ingredients in a soup pot (see pictures below), heated it up on medium low just before the skillet ingredients were ready, and then dumped the skillet ingredients into the pot.  After that, I had to bring it to a boil, cover it, and cook on low for 45 minutes.

Next time I make this soup though, I will try adding rice.  I think it would add a nice texture and more substance.

So, was it good?  Yes, yes it was.  I will definitely be making it again.






Also, I would like to add that the oil and aloe water make-up remover has been working quite well.  My skin has never looked better!
